Easy–Roasted Parmesan Asparagus

Ingredients:

Asparagus- washed and trimmed (I prefer the thin ones, but thick ones are good too!)

Olive oil or melted coconut oil

Lemon pepper

Garlic salt

Parmesan cheese

Directions:  Heat oven to 425.   Lay foil down on a cookie sheet and spray with cooking spray. Pour some olive oil, lemon pepper, and garlic salt in a gallon size zip-lock bag.  How much?  Ooh.. just some.  Depends on how salty and lemony you want it.  But don’t put too much oil, just enough to coat the asparagus.   Place the asparagus in the bag and shake it/squish it around until the asparagus is well coated.  Place asparagus in single layer on cookie sheet.  Bake for 10-15 min depending on how crisp you want it.  Take it out and sprinkle some parmesan cheese on top and bake for about 5 more minutes.

Tell your kids its superhero food.  Maybe they’ll give it a try!  Because if they try it, they will probably love it!
